Fish en papillote. The name sounds so fancy, doesn’t it? I wish it could say it wasn’t just fish in parchment paper, but alas, that’s exactly what it is. What gives this dish such flavor is enclosing it in its own goodness with fresh herbs and spices. This is a great date night meal for those who want to make a pretty meal in little time.

 

FISH EN PAPILLOTE (serves 2)

Ingredients

 

  • Two 4 oz. sole fillets
  • 1 clove of garlic, minced
  • Herb(s) of your choice. Rosemary, sage, chives are my personal favorites.
  • Butter, sliced
  • Asparagus
  • Parchment paper
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 lemon, very thinly sliced

 

Directions

Preheat oven to 400.  Lay veggies on a piece of parchment paper and layer with butter. Lay fish on top of butter and add herbs, salt and pepper. Top fish with a few more thin slices of butter and lemon.  

Seal up parchment paper tightly by rolling edges. Place on cooking sheet and bake for 15 minutes, or until cooked through.
