Much as we love our collards, it could be time to occasionally swap them out for kale, the royalty of leafy greens. The cruciferous vegetable comes with an abundance of nutritional gifts, such as fiber and antioxidant vitamins K, A and C, as well as the minerals copper, potassium, iron, manganese and phosphorus. Kale can ward off cancer and improve eye and bone health. If sautéing or boiling isn’t quite your thing, try it in chip form.
