Sometimes our bodies scream for greens, especially during after the decadent eating ocf the holidays. I have made this salad time and again, especially when I am short on time or need a quick health reboot. If you are a vegetarian, you an easily leave out meat from the salad and still get great flavor with the apple and dressings.

Many people hesitate to eat raw kale because of its bitter taste, but if you massage the leaves for 2-3 minutes with a little olive oil or avocado, you can soften the taste a bit and still get the great health properties of the green superfood. It also makes for a great leftover salad, even a few days later.

Ingredients:

  • 1 bunch of kale, chopped
  • 2 cooked chicken breasts, cubed
  • 3 strips of bacon or turkey bacon, chopped
  • One apple, chopped

Lemon-Maple Dressing:

  • Half of lemon juice
  • 1 tablespoon of maple syrup
  • 2 tablespoons of olive oil
  • Dash each of salt, pepper and oregano

Directions:

Mix everything in large bowl, and add dressing to your taste. Easy!
