Salmon is such a versatile fish; you can prepare it a number of ways and it will absorb the flavors quite well. Lately, I have grown tired of chicken, but still often crave a protein with a jerk seasoning.  I decided to try my hand at jerk salmon and was so pleased with the results that next time, I will throw in on top of a big salad. When summer arrives and fruit is at its height of freshness, a mango salsa to serve with this recipe is going to be downright divine. But until then, this will have to do. Enjoy.

JERK SALMON

INGREDIENTS (SERVES 4):

  • 1 pound of wild caught salmon (say no to farm-raised fish!)
  • 1 tsp of oil
  • 1 tsp ground ginger
  • ½ tsp all spice
  • ½ tsp thyme leaves
  • ½ tsp curry
  • ½ tsp cinnamon
  • ½ tsp chili powder
  • 1 tsp of sea salt

 

DIRECTIONS

Mix seasoning together and rub on meat side salmon. Heat oil over medium-high heat in a cast iron skillet. Add salmon meat side down, and cook for 3-5 minutes, or until salmon is opaque. Flip salmon and cook on meat side for additional 2-3 minutes.
