Baked apples are a tasty guilt-free dessert. This recipe from the Daily Burn is high in vitamins C and E, plus fiber rich!
Ingredients:
- 2 Apples
- 2 tbsps of Maple syrup
- 1/2 tsp of Cinnamon
- 2 tbsps of Chopped pecans
- 2 tbsps of Chopped dried cranberries
- 1/2 cup of Boiling water
- 2 tbsps of Coconut oil
- 1 tbsp of Ground flaxseed
Directions:
1) Preheat oven to 400 degrees F. In a small bowl, mix maple syrup, cinnamon, pecans, dried cranberries, and ground flaxseed.
2) Core two apples with an apple corer, or use a paring knife to slice off the top of the apple and carefully cut out the core.
3) Use a spoon to scoop the pecan mixture into each apple. Place 1 tsp of coconut oil on top of the apple stuffing. Add water to a baking dish and place apples in the water.
4) Bake for 30 minutes and serve immediately.
