Simple and filling, this lemon pasta is perfect for a day when nothing is going to come between you, a bowl of carbs, and a glass of wine. The zesty flavor of the lemon adds an earthy, tangy flavor to a typical pasta dish, while the fried basil takes the dish over the edge with just the right amount of bite. This is a perfect meal to serve to at a dinner party, or as a side dish with a nice peace of fish or chicken.

Light Lemon Pasta

Ingredients

  • 1 box of spaghetti
  • 1 garlic clove, minced
  • 4-5 basil leaves, fried
  • 1 tsp. oregano
  • Salt and pepper, to taste
  • ½ cup of Parmesan
  • 2 tblsp. olive oil
  • Juice from one lemon
  • Zest from one lemon rind

 

Directions

Cook spaghetti according to directions on box. Heat olive oil in pan over medium heat. Add basil leaves and cook until crispy, about 3 minutes. Add minced garlic to olive oil and lower heat.  Mix lemon juice, lemon rind, Parmesan and salt and pepper. Add spaghetti to garlic and olive oil. Top with lemon juice mixture and mix. Crumble fried basil over spaghetti. Enjoy with a glass of red wine.
