Spring is here…kind of.  Even though it officially began on March 20th, for many of us the start of spring only brought more chilly temps and wet weather.  But regardless of your current weather forecast, you can summon the warmer days ahead, and a bit of Puerto Rico, with these rum filled cocktails sure to put a definite spring in your step.

The 8th Day

This cocktail is perfect for in-between spring weather.  It invokes that cozy sitting by the fireplace winter feeling, but the rum and coconut transport you to a tropical paradise, all in one glass.  Who said you need a flight to travel.
Ingredients:
· 1 ½ parts HAVANA CLUB Añejo Clásico
· 3 parts Chai Tea
· 1 ¾ parts coconut milk
· 1 part simple syrup or 1tbs White Sugar

Method:
Hot: Prepare Chai Tea. While the tea steeps, warm coconut milk over medium heat, do not boil. Combine ingredients in a high temperature resistant mixing glass, adding rum last and stir. Serve in an Irish Coffee Cup or preferred glass coffee cup, and garnish with a cinnamon stick.

Cold: Prepare Chai tea, removing tea bag after steeping, and allow to cool. Combine ingredients in a cocktail shaker with crushed ice. Shake vigorously. Pour ingredients into an empty, chilled rocks glass. Garnish with grated cinnamon or toasted coconut shavings.

This straight up cocktail is for those who are ready for a classic spring season.  Sweet, smooth, and full of heat.  This is one drink perfect for that first truly nice spring day.
Ingredients:
· 2 parts HAVANA CLUB Añejo Clásico
· ¾ parts MARTINI & ROSSI sweet vermouth
· ½ part Amaro
· 2 dashes orange bitters

Method: Stir all ingredients vigorously with plenty ice until very cold, strain into a rocks glass with an ice sphere. Garnish with an orange peel.
